FOUR PILLARS GIN

Four Pillars was established by Cameron, Matt and Stuart, and we sold our first batch of Rare Dry Gin through a crowdfunding campaign on Pozible in late 2013 to a very enthusiastic group of gin-lovers. We established Four Pillars with a focus on gin. But great gin doesn’t just make itself. We recognised that our real focus would need to be on the craft of distilling.

If we could elevate this area of expertise in Australia, and bring a modern Australian sensibility to the process, then maybe we could make a gin worth shouting about.  Two years later we have five different gins, multiple gold medals at international spirits competitions and now a brand new distillery operation and tasting bar.From Rare Dry Gin to Barrel Aged Gin to Navy Strength Gin to Orange Marmalade (made with the oranges that make the gin) everything we do is designed to elevate the craft of distilling in Australia. We hope you agree we’re on the right path. The judges at a number of prestigious international competitions must think so, as we’ve been awarded a Double Gold, Gold or Master status for all our mainstay gins in the past two years.

Rare Dry Gin

Four Pillars Rare Dry Gin is crafted to deliver the best of all worlds: a perfect, classic gin and also something that would fascinate and delight even the most hardened gin fanatic. It’s spicy but with great citrus, a truly modern Australian gin which captures the essence of contemporary Australia’s heritage in Europe and Asia. We’re using whole oranges which is unusual but our citrus is highly aromatic and supports the spicier botanicals like cardamom.


Navy Strength Gin

After experimenting with some exclusive batches of our Navy Strength for the Gin Palace we decided to add fresh Byron Bay finger limes, along with our beautiful organic oranges. So, we release just one edition of this gin each year, when they’re in season. The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the addition of fresh ginger. Finally, fresh turmeric adds a fresh but earthy quality. The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character.


Bloody Shiraz Infused Gin

The gin has great depth of colour and is carrying really beautiful purples and reds to bottle. Flavour-wise, it’s showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course, a lovely ginny character carries those grape aromas, making it unmistakably gin.

Bloody Shiraz Gin is unfiltered and will develop secondary fruit characters beyond two years (it’s best consumed within two years of vintage). Enjoy it over ice with a slice of fresh orange.


Spiced Negroni Gin

This gin was the result of a conversation in 2014 between Cameron (our distiller) and Jason (top bartender), the first collaboration in our Bartender Series. Together they wanted to create a gin specifically for the Negroni – something to cut through the Campari and vermouth.

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise.
